Poached Salmon

Virginia Willis had a good idea. The latest post on her blog is about sustainability and oceans fisheries, which I heartily endorse. But more importantly she gave us a cold dish to make for dinner. Because short of sucking on a Coke Slurpee in one hand and a fat watermelon slice in the other while lounging in a kiddie pool full of crushed ice, cooking in a hot kitchen is the last thing I really want to do.

As for me, when faced with a weather forecast calling for a week's worth of 99 degree heat and humidity, I'm ready to hide out in the cool darkness for an all day movie theater marathon. Here's hoping everyone stays safe during the heatwave.

Went to the link. Very interesting.
Salmon is a big issue here in WA as we have the ocean and the Columbia river and all the dams.
My grandparents had a cabin on a river here in WA - seems like every morning I would wake up and there he would be, wading across the river with a huge fresh caught steelhead.
Going to try this dish.

Once it cools down, I'm going to 24 K-Mart and buy me a kiddie pool.

The salmon sounds divine. We typically grill all things in the summer months, but it's just too hot. Had some Squealers from The Store in Raytown yesterday (ground beef, bacon and cheese in a patty). Yum.

Kiddy pools! Hey! whatever works. Although, that does remind me of a funny story.

Sorry! correction on the Squealers - prime sirloin ground with smoky bacon and cheese. $2.99 a pound, too.
