    I kid not!! earlier this week I made a leftover BBQ chicken salsa verde enchilada casserole - honest.
    I did not however take a-one photograph. Dang !! those enchilada casseroles - not so photogenic-although
    tres tasty. I'll think of something. I'm always prepared,
    and up for a quesadilla.
