WONDERFUL! When I worked Sat. nights as a cocktail bartender at a high-end restaurant in Sydney, I had to be barista at the end of the night after dinner. (Aussies REALLY love their coffee after dinner!) and it was a challenge just to froth the milk and get it full of air. Esp. in the Spring when the grass is so rich and so is the milk, heavy with fat!
It's easy to froth lowfat or skim milk as there is not as much heavy fat weighing it down, but you won't catch these baristas using anything but full fat milk!
