I'm still here. I pretty much expected to still be here despite Rapture Fever. No way a heathen like me was going anywhere but to work on Monday morning. Still it's always good to be prepared. I thought a Post-Rapture dish was in order. Something hot and spicy for those of us left behind...to prepare us for a possible spicy afterlife. Beef Short Ribs with Red Chili Sauce seemed appropriate with not just one but two devilishly spicy dried chili varieties.
It makes my eyes burn just to look at them. Actually if I squint hard enough I think I can see the face of El Diablo in that ancho chili. Even worse? The extracted liquid after you soak and pulverize the chilies.
I'm sure this is some pretty tame stuff for most heat loving folks but for me it's an adventure in eating. Yet mixed with the meaty juices of the short ribs, it's not as spicy as I thought it would be.
Nice thick meaty short ribs with a mule kicking sauce is pretty good heathen eating. I even have enough sauce leftover to try broiling some sliced eggplant with it. Now if I can just find some peach ice cream for dessert? Wonder if the Raptured took it all with them?

My nose is running just from looking at the pics. Cold beer, please!
Pati Jinich would be hellaproud, Shamster.
I want to know what the plate in the last pic is sitting on.
Those short ribs look AMAZING.
wow!
Eldest attempted to eat his way thru all the spicy food in South Korea and impressed a couple shop keepers with his abilities.
We did short ribs too yesterday. Smoked them on the grill for a few hours. I had a couple bites but that was all. I'm not much of a meat eater and these just tasted too fatty like.
Yes, Syd, something cold and soothing was in order.
The ribs are on some little restaurant plate but the plate is sitting on the potholder Dani sent me. I try and work it in any chance I get.
Southeast Asia has some serious fire eaters. Thailand especially. My brother spent some time in Thailand and is definitely the spicy food king in my family.
Dani, they are fatty but then again, steaks back in the day used to be cut with a lot more fat on them. Not so anymore. Still the sauce might work on a host of veggies.
Ah - potholder from Dani! A true classic.
Agree, you could put that sauce on anything.
Would you like to experiment with some ghost chiles? Let me know and I'll send them along...
Oh wow! Those chilis are making my mouth water! Is the sauce just the juice from the chilis and the juice from the ribs or did you add other things?
